Pineapple Coconut Ice Cream Recipe
Pineapple coconut ice cream has to be one of my all time favorites.
After eating the store bought version once, I knew I had to try to make it myself…especially when I couldn’t find it in the store anymore!
I love the Pina Colada – pineapple and coconut flavors blended together and if this is one of your favorite combos too – you just have to try this recipe. You will be craving more!

What Type of Coconut Milk Should I Use?
When buying coconut milk for ice cream, what type of coconut milk should you buy?
The smoothness and creaminess of ice cream is largely dependent on the fat content of its ingredients.
The reason slushies are more icy is that the ingredients used to make this beverage are water based.
So when making a coconut ice cream, if you want to have a smoother, more creamy ice cream, you should choose the full fat varieties.
If you use the reduced fat varieties, your ice cream will turn out harder and more icy.
Serving Tip
Serve with fresh pineapple and curls of fresh coconut.
You can even serve out of a hollowed out coconut.
Pineapple Coconut Ice Cream
Ingredients
- 1 cup coconut milk
- 1/2 cup sugar
- 1 1/2 cups whipping cream
- 1/2 cup crushed pineapple
Instructions
- Mix the sugar and the coconut together with a whisk or a fork until the sugar completely dissolves.
- Stir in the heavy whipping cream.
- Add the crushed pineapple and combine well.
- Pour the pineapple coconut mixture into your ice cream maker.
- Churn about 20-25 minutes or according to manufacturer’s instructions.
- Enjoy this pineapple coconut frozen dessert!
Pineapple Coconut Ice Cream Recipe
Ingredients
- 1 cup coconut milk
- 1/2 cup sugar
- 2 egg yolks lightly beaten
- 1 1/2 cups whipping cream
- 1/2 cup crushed pineapple
Instructions
- In a saucepan, combine coconut milk and sugar.
- Warm over medium heat just until it begins to bubble.
- In a bowl, beat the egg yolks.
- Pour the heated coconut milk mixture over the beaten egg yolks. Stir well.
- Pour mixture back into the saucepan.
- While stirring constantly, heat mixture over medium-low heat until it becomes thick (it will start to stick to the back of your spoon).
- Place in fridge until completely chilled (about 3 hours or overnight).
- Once cooled, add the whipping cream and crushed pineapple.
- Pour into ice cream maker and churn about 20-25 minutes or according to manufacturer’s instructions.
- Enjoy this delicious pineapple coconut frozen treat!
