I love St Patrick’s Day!
No, I’m not Irish, but we never fail to celebrate this holiday!
But…I needed a really good ice cream recipe to help our celebrations.
And so Leprechaun’s Delight Ice Cream was born.
It’s both festive and easy to make…
…and definitely a pleaser for all your little leprechauns.
My crew tried it and were loving it!
What Makes Leprechan Delight Ice Cream So Special?
So, just what’s so crave worthy about this ice cream flavor?
Oh. I thought you’d never ask!
Any St Patty Ice Cream has to be…you guessed it GREEN!
I didn’t want it to mimic Mint Chocolate Chip (athough that is one of my all time favs). I wanted it to be distinct and different.
The ice cream base is a green vanilla ice cream – loaded with plenty of treasure!
Mint chocolate chunks, white chocolate chips, and graham cracker pieces.
Delightful!

St Patrick’s Day Ice Cream Recipe
Ingredients
- 1 cup milk
- ½ cup sugar
- 1 ½ tsp vanilla
- 2 cups heavy whipping cream
- green food coloring
- ⅓ cup mint chocolate chunks can use chunks, chips, or broken chocolate bar
- ⅓ cup white chocolate chips can use chunks, chips, or broken chocolate bar
- ⅓ cup graham cracker pieces broken small
Instructions
- Mix milk and sugar together until sugar dissolves completely.
- Stir in vanilla and whipping cream.
- Add green food coloring until you achieve your desired color.
- Pour mixture into ice cream maker and churn for about 25 min or according to manufacturer's instructions.
- While ice cream is churching, measure out the mix-ins: mint chocolate, white chocolate, and graham cracker pieces. Chill in refrigerator or freezer.
- Pour mix-ins into ice cream maker during last 5 minutes of churning.
- Enjoy! Let the shenanigans begin!
St Patricks Day Ice Cream
Ingredients
- 1 cup milk
- 2 eggs large
- ½ cup granulated sugar
- 2 cups heavy whipping cream
- 1 ½ tsp vanilla extract
- green food coloring
- ⅓ cup mint chocolate chunks can use chunks, chips, or broken chocolate bar
- ⅓ cup white chocolate chips can use chunks, chips, or broken chocolate bar
- ⅓ cup graham cracker pieces broken small
Instructions
- Heat milk in saucepan until it just begins to bubble around the edges.
- Meanwhile, whisk eggs for 1-2 minutes until they are light and fluffy.
- Gradually, whisk in sugar, then stir for 1 minute more.
- Pour about half of the hot milk over the eggs and blend well.
- Pour remaining milk over eggs and combine.
- Return to saucepan and continue to warm over low heat.
- Stir constantly until mixture thickens and begins to stick to the back of your spoon.
- Chill about 3 hours or until completely cool.
- After milk cools, add cream and vanilla, stirring until completely blended.
- Add green food coloring to achieve desired color.
- Pour into ice cream maker and mix for about 25 minutes or according to manufacturers instructions.
- Meanwhile, measure out mint chocolate pieces, white chocolate, and graham cracker pieces.
- Chill these 3 mix-ins in the refrigerator or freezer and then add during the last 5 minutes of mixing.
