This Ben and Jerry's copy cat ice cream allows you to enjoy Cherry Garcia made right in your own home.
Makes 1 1/2 quarts of ice cream.

halved and pitted (fresh Bing cherries are best, if using canned – be sure to drain syrup)

Cherries
This step is optional, but recommended. It prevents the cherries from becoming too hard when frozen.
Preheat oven to 450.
Place whole (de-stemmed) cherries in an ovenproof glass dish.
Coat the cherries in sugar.
Roast in the oven for 10-15 minutes, stirring occasionally. Cook until the cherries are soft, but be careful the sugar doesn't burn.
When done, cool, remove pits, and slice into quarters.
Chill overnight.
Ice Cream Base
Place eggs and sugar in a small bowl and beat well, until light and fluffy.
In a saucepan, heat milk until it starts to bubble.
Pour hot milk over beaten egg mixture. Stir well.
Pour this mixture back into saucepan and heat, stirring constantly until mixture becomes thick and sticks to the back of a spoon.
Chill for at least 2 hours.
After mixture is chilled, stir in whipping cream.
Pour this ice cream base into your ice cream machine.
Mix for 20-25 minutes (or according to manufacturer’s instructions).
Into the churning ice cream, add dark chocolate and cherries.
Mix for 5 minutes.
Dig in!
