Finding Coconut Milk
I’d been wanting to make this recipe for quite some time – but the only trouble I had was being able to find the coconut milk.
If you have ever had trouble finding this before too, I sympathize with you.
Grocery stores generally carry the coconut milk in their Asian food section.
Some stores stock it in their canned milk section. You can find it alongside evaporated milk and sweetened condensed milk.
If the store you usually frequent doesn’t carry it, try a higher end grocery store or a health food grocery store.
It’s definitely worth the hunt – because you’ll love this ice cream!
Serving Tip
Serve inside a hollowed out coconut or serve with fruit or a fruit based dessert. Delicious!

Coconut Ice Cream
Ingredients
- 1 cup coconut milk
- 1/3 cup sugar
- 2 cups heavy whipping cream
- 1 tsp vanilla extract
Instructions
- Stir the sugar and the coconut together until sugar dissolves completely.
- Stir in the heavy whipping cream, as well as the vanilla.
- Pour this coconut mixture into your ice cream maker.
- Churn about 20-25 minutes or according to manufacturer’s instructions.
- Enjoy this tasty coconut treat!
Coconut Ice Cream Recipe
Ingredients
- 1 cup coconut milk
- 1/3 cup sugar
- 2 egg yolks lightly beaten
- 2 cups heavy whipping cream
- 1 tsp vanilla extract
Instructions
- Stir coconut milk and sugar together in a saucepan.
- Over medium heat, warm this mixture until it begins to bubble.
- Beat egg yolks.
- Pour the coconut milk mixture over the egg yolks and whisk.
- Pour this back into the saucepan.
- While stirring constantly, heat mixture over low-medium heat until it thickens and begins to stick to the back of your spoon.
- Place in your refrigerator until chilled (about 3 hours).
- Stir in the whipping cream and vanilla.
- Churn in your ice cream machine about 20-25 minutes or according to manufacturer’s instructions.
- Enjoy this tasty coconut dessert!
