Blackberry Ice Cream Recipe
This blackberry ice cream recipe is absolutely delicious – packed with flavor, smooth, soft, and colorful.

These little ice cream desserts are super easy to make.
Bake a small brownie in muffin tins and cool completely.
Remove brownies completely from muffin cups so they are not stuck to the pan.
Replace brownies into muffin tins and fill with ice cream (already churned in ice cream maker).
Freeze.

The Verdict
After trying it, my husband declared that this was his favorite fruit ice cream.
It really is delicious.
The ice cream turned out surprisingly smooth and soft. Fruit based ice cream has a tendency to be hard and icy, so that was a special treat.
The ice cream had a beautiful purple color that makes it as elegant as it is tasty.
My extremely observant 3 year old was excited to eat it because apparently it looks like play-doh! To each his own, I guess.
Judging from the way she downed it, I’m thinking if must taste better than play-doh…well, then again, I wouldn’t but it put it past her to down the play-doh either. Hmmm….
Blackberries
For this recipe, you can use fresh blackberries or frozen blackberries.
Fresh berries
Because you will be processing the berries in a blender, it will make no difference whether your berries are beautiful or whether they were crushed.
Use up the berries that aren’t as pretty for this recipe and save the beautiful ones for garnish on top.
Frozen Berries
Frozen berries will work great in this recipe.
De-thaw a bit before processing in the blender.
Allow berries to completely de-thaw and sit with sugar for at least 2 hours so that the delicious fruit syrup can form.
Ice Cream Popsicles
Spoon ice cream into popsicle molds and enjoy as an ice-cream-sicle.
Serving Tip
Serve with chocolate.
The flavors blend incredibly well.
Use shaved chocolate, chocolate chips, or your favorite chocolate cake.
White chocolate would make a elegant contrast with the ice cream’s color.

Ingredients
Blackberries
- 2 cups blackberries (1 pint) (fresh or frozen)
- ¾ cup sugar
Ice Cream Base
- ¾ cup sugar
- ¾ cup milk
- 2 cups heavy cream
Instructions

- In a food processor or blender, process berries with sugar until smooth.
- Place blackberry mixture in the fridge for at least 2 hours. Leaving the blackberries, in the fridge longer will enhance the flavor, so I kept mine in the fridge overnight.
- If desired, strain seeds from blackberries.
Ice Cream Base
- Mix milk and sugar together well so that sugar dissolves.
- Add whipping cream and combine well.
- Stir in blackberry mixture.
- Pour into your ice cream machine.
- Churn about 25-30 minutes or according to manufacturer’s instructions.
- Enjoy this delicious blackberry frozen treat!

- Meanwhile, beat eggs with remaining 3/4 cup sugar until the mixture is a pale yellow color.
- Heat milk just until bubbles start to form.
- Pour the hot milk over the beaten eggs. Lightly whisk.
- Pour this egg/milk mixture back into the saucepan.
- Over medium heat, stir until mixture thickens and begins to stick to the back of your spoon.
- Chill completely – this will take at least 3 hours.
- Add whipping cream to chilled milk mixture and combine well.
- Stir in blackberry mixture.
- Pour into your ice cream maker.
- Churn about 25-30 minutes or according to manufacturer’s instructions.
- Enjoy your delicious fruity dessert.
