Choosing Your Pineapple
For this recipe, you can use fresh, frozen, or canned pineapple.
If you are using a fresh pineapple, you’ll want to pick a ripe one from the store.
So just how do you choose a pineapple?
Appearance
It should look “fresh.”
The leaves should be green. The fruit itself should be a greenish yellow in color.
Feel
The fruit itself should be firm, but have a little bit of give to it.
Smell
When you hold the pineapple up close to your nose, you should be able to smell that familiar pineapple smell through the skin.
If there is no smell, it’s probably not ripe. If it smells bitter, it’s probably overripe.
Serving Tip for Pineapple Ice Cream
Serve with coconut flakes or fresh shaved coconut on top of this ice cream. Coconut and pineapple were made to go together!
This ice cream is also elegant when paired with little mandarin orange slices. The contrast of the yellow in the ice cream with the vibrant orange of the mandarin slices is an enticing eye catcher.

Pineapple Ice Cream
Ingredients
Pineapple
- 2 cups pineapple (1/2 of a fresh pineapple) (or you can used canned, Dole pineapple is good)
- 1/2 cup sugar
- 1/2 lime optional
Ice Cream Base
- 1/2 cup sugar
- 1/2 cup milk
- 2 cups heavy whipping cream
Instructions
Pineapple
- Place pineapple, sugar, and the lime (if you’re using it) in a food processor or blender and blend until competely smooth.
- Place pineapple mixture in the fridge for at least 2 hours. Leaving the fresh pineapple, in the fridge longer will enhance the flavor, so I kept mine in the fridge overnight.
Ice Cream Base
- Whisk milk and sugar together until sugar dissolves.
- Add whipping cream and combine well.
- Stir in chilled pineapple mixture.
- Pour into your ice cream maker.
- Churn about 25-30 minutes or according to manufacturer’s instructions.
- Enjoy this delicious frozen pineapple dessert!

Pineapple

- 1/2 cup sugar
- 1/2 lime optional
Ice Cream Base
- 1/2 cup sugar
- 3 large eggs
- 1/2 cup milk
- 2 cups heavy whipping cream
Instructions
Pineapple
- Place pineapple and sugar in a blender or food processor or blender. Add lime, if desired.
- Process mixture until smooth and becomes a watery syrup.
- Chill pineapple mixture in the refrigerator for at least 2 hours for flavors to blend. Leaving the pineapple in the fridge longer will enhance the flavor. I chilled mine overnight.
Ice Cream Base
- While the pineapple mixture is chilling, beat eggs with remaining 1/2 cup sugar until the mixture is pale yellow.
- Heat milk over medium heat, just until bubbles start to form around the edges.
- Pour the hot milk from the saucepan over the beaten eggs, then whisk lightly.
- Pour this mixture back into the saucepan and continue to heat over medium heat. While stirring, continue to heat mixture until it thickens and starts to stick to the back of your spoon.
- Chill completely – this will take at least 3 hours.
- Add whipping cream to chilled milk mixture and combine well.
- Stir in chilled pineapple mixture.
- Pour into your ice cream machine.
- Churn about 25-30 minutes or according to manufacturer’s instructions.
- Enjoy your delicious homemade pineapple treat.
