Yes, there are some that don’t like gingerbread or gingerbread cookies because the flavor is too strong.
So, I suppose when it comes to gingerbread, “delicious-ness is in the mouth of the taster!”
I think this ice cream is perfect as is, but if you would like to have a less strong gingerbread flavor – simply cut back a bit on the spices.
You can always add more spice later, but it is hard to take the spices out of the ice cream base after you put it in.
Serving Tip
Place one scoop of ice cream in a shallow dish. While the ice cream is still hard, quickly press a cookie stamp into the scoop of ice cream to create a decorative image.

Gingerbread Ice Cream
Ingredients
- 1 cup milk
- ⅓ cup brown sugar
- 2 tbsp molasses
- 1 tsp ground cinnamon
- ¼ tsp nutmeg
- ¼ tsp ground cloves
- 2 cups whipping cream
Instructions
- Whisk milk and sugar together to completely dissolve the sugar.
- Stir in molasses, cinnamon, nutmeg, and cloves.
- Add heavy whipping cream and blend well.
- Pour into your ice cream maker.
- Churn in ice cream maker about 25-30 minutes or according to manufacturer’s instructions.
- Enjoy! It’s a holiday party pleaser!
- Helpful Hint: If you want a hint of gingerbread flavor, rather than a full flavor – just reduce the amount of spices you add to the ice cream mixture.
Gingerbread Ice Cream Recipe
Ingredients
- 3 egg yolks
- 1 cup milk
- ⅓ cup brown sugar
- 2 tbsp molasses
- 1 tsp ground cinnamon
- ¼ tsp nutmeg
- ¼ tsp ground cloves
- 2 cups whipping cream
Instructions
- Place eggs in a small bowl and beat well. Set aside
- In a saucepan, mix milk, brown sugar, molasses, cinnamon, nutmeg, and cloves. Heat until it just starts to bubble.
- Pour hot milk mixture over beaten egg mixture. Stir well.
- Pour this mixture back into saucepan and heat, stirring constantly until mixture becomes thick and sticks to the back of a spoon.
- Chill for at least 3 hours.
- After mixture is chilled, stir in heavy whipping cream.
- Pour into your ice cream machine.
- Mix for 25-30 minutes (or according to manufacturer’s instructions).
