You can use an ice cream maker, but you can also make ice cream without an ice cream maker.

There are a few things to keep in mind when making ice cream.
Recipe
Fat content and sugar content are key to a smooth and creamy ice cream.
You can totally reduce the whipping cream or the sugar, just keep in mind your ice cream will be a little less creamy and a bit more icy.
Technique
Air that is churned into the ice cream as it freezes also helps make the ice cream more creamy. That is why freezing your ice cream base in an ice cream maker produces soft ice cream. Simply stick your ice cream base in the freezer and you will have a block of hard ice milk!
A fast freeze also helps to create a softer ice cream. This is why I like to freeze not only my ice cream maker bowl, but also the churning paddle.
This is also why, if you make custard style ice cream, you need to make sure that the ice cream has been thoroughly chilled before churning in your ice cream maker. If it is still hot, it simply won’t freeze quickly and you’ll end up with a harder ice cream.

Homemade Vanilla Ice Cream
Ingredients
- 1 cup milk
- ½ cup granulated sugar
- 2 cups heavy whipping cream
- 1 ½ - 2 tsp vanilla extract
Instructions
- Mix milk and sugar with a wire whisk or hand mixer (low speed for 1-2 minutes) in a medium bowl until sugar dissolves.
- Gently stir in heavy cream and vanilla.
- Pour mixture into your ice cream maker.
- Mix about 20-25 minutes or according to manufacturer’s instructions.
- Enjoy your tasty treat!
Homemade Vanilla Ice Cream Recipe
Ingredients
- 1 cup milk
- 2 large eggs
- ½ cup granulated sugar
- 2 cups heavy whipping cream
- 1 ½ - 2 tsp vanilla extract
Instructions
- Heat milk in a saucepan until it just begins to bubble around the edges.
- Meanwhile, whisk eggs for 1-2 minutes until they are light and fluffy.
- Gradually, whisk in sugar, then whisk for 1 minute more.
- Pour about half of the hot milk over the eggs and blend well.
- Pour remaining milk over eggs and combine.
- Return to saucepan and heat over low heat.
- Stir constantly until mixture thickens and begins to stick to the back of your spoon.
- Chill about 3 hours or until completely cool.
- Once milk mixture is cool, add cream and vanilla, stirring until completely blended.
- Pour this mixture into your ice cream maker.
- Mix about 20-25 minutes or according to manufacturer’s directions.
