Peppermint Sprigs
Choosing
When choosing mint sprigs from your garden, store, or farmer’s market, your going to want to choose ones whose leaves look fresh and healthy.
Don’t choose ones whose leaves are limp or wilting.
Smell the leaves. You should easily be able to smell that delicious minty flavor.
Storing
If you have any left over mint sprigs, don’t store them bundled with the rubber band they may have come with.
Allow them to lie loose, very lightly wrapped in a barely damp paper towel. Don’t wrap tight.
Place this mint bundle in a plastic container or bag.
Serving Tip
This ice cream looks elegant when served with curls of shaved chocolate.
You can also garnish with a sprig of fresh peppermint!

Peppermint Ice Cream (Fresh)
Ingredients
- 1 cup milk
- 2 cups whipping cream
- ⅔ cup fresh peppermint leaves
- ½ cup sugar
- ¾ tsp vanilla
Instructions
- In a saucepan, heat milk, whipping cream, and sugar together over medium high heat until it just starts to bubble.Turn off heat, add peppermint, and steep covered for about 2 hours.
- Strain and discard peppermint leaves, firmly pressing out any extra liquid.
- Stir in vanilla.
- Chill mixture in fridge about 2 hours – until completely cold.
- Pour into ice cream maker and churn about 25-30 minutes or according to manufacturer’s instructions.
- Serve by itself or with curls of shaved chocolate and a fresh sprig of peppermint.
Peppermint Ice Cream Recipe (Fresh)
Ingredients
- 1 cup milk
- 2 cups whipping cream
- ⅔ cup fresh peppermint leaves
- 2 eggs
- ½ cup sugar
- ¾ tsp vanilla
Instructions
- Place milk, whipping cream, and sugar in a saucepan and heat until it just starts to bubble.
- Turn off heat and throw in the fresh peppermint leaves.
- Cover and steep peppermint in the milk mixture for 1 hr.
- Beat eggs, sugar, and vanilla together until light and fluffy.
- Reheat the milk mixture over medium high heat until it just starts to bubble.
- Pour about 1/2 cup of the heated milk over the eggs, stir to combine, and then pour back into the saucepan.
- Heat on low, stirring constantly, until the mixture thickens and begins to stick to the back of your spoon.
- Remove from heat, cool, and then strain peppermint leaves from ice cream base.
- Place in fridge and chill. This will take at least 3 hours.
- Pour into ice cream maker and churn about 25-30 minutes or according to manufacturer’s instructions.
- Serve and enjoy your garden fresh ice cream treat.
