Spearmint is a plant with jagged leaves that is in the mint plant family.
It smells and tastes – you guessed it – minty.
So what is the difference between spearmint and mint?
The answer is in what it tastes like…and each tastes the way it does because of what it’s made of.
Spearmint contains 1% menthol and mint contains 4% menthol.
So which do you think has a more minty flavor?
Yes! The mint.
So spearmint has a much more subtle taste than mint.
As a result, this ice cream will have a more subtle minty taste.
So if you love a minty flavor, but you don’t want to be blown away by the minty-ness, you’ll love the flavor that spearmint creates in this recipe.
The Verdict and Variations
This ice cream recipe has a mild “spearminty” flavor…just what my husband likes. He prefers a subtle taste as opposed to the “in-your-face” flavor that I love.
If you’d like a stronger flavor, simply let the leaves steep in warm milk for 10-15 minutes.
Serving Tip
Garnish ice cream with a fresh sprig of spearmint!
If you love the combo of mint with chocolate, stick a square of dark chocolate in each scoop, garnish with chocolate curls, or drizzle with your favorite chocolate sauce.

Spearmint Ice Cream
Ingredients
- 1 cup fresh spearmint leaves
- 1 cup milk
- ⅔ cup sugar
- 2 cups heavy whipping cream
Instructions
- Place fresh spearmint leaves in a saucepan and cover leaves with water.
- Heat saucepan, bringing water to a boil and softening leaves.
- Strain mixture, reserving the leaves and discarding the water.
- Place softened spearmint leaves back in the saucepan and add milk. Puree leaves with a stick blender.
- For a more intense flavor, heat milk and spearmint mixture, but do not let it boil.
- Remove from heat and cool mixture.
- Stir in whipping cream.
- Chill until completely cooled, about 3 hours.
- Pour mixture into ice cream maker.
- Churn about 25-30 minutes or according to manufacturer’s instructions.
- Enjoy this fresh, unique ice cream flavor!
Spearmint Ice Cream Recipe
Ingredients
- 1 cup fresh spearmint leaves
- 1 cup milk
- ⅔ cup sugar
- 2 eggs
- 2 cups heavy whipping cream
Instructions
- Place fresh spearmint leaves in a saucepan and cover leaves with water.
- Bring water to a boil to soften the spearmint leaves.
- Strain the mixture – keep the leaves, but discard the water.
- Pour milk into saucepan and add spearmint leaves.
- Puree the leaves with a stick blender until fine.
- Heat milk and spearmint mixture until it just starts to bubble.
- Remove from heat and cool mixture. Stir in whipping cream.
- Meanwhile, in a separate bowl, beat egg and sugar together.
- Pour about 1/2 of the heated milk over the eggs, stir to combine, and then pour back into the saucepan.
- Heat over low heat until mixture thickens and begins to stick to the back of the spoon.
- Remove from heat and cool.
- Place in fridge and chill until completely cooled. This will take about 3 hours.
- Pour into ice cream maker. Churn about 25-30 minutes or according to manufacturer’s instructions.
- Enjoy this fresh ice cream flavor!
