But ice cream? For real?
Yup! Intriguing.
And I just had to try it!
The Verdict
One of our friends stopped me the other day and said she had a herb garden with all sorts of different herbs.
Knowing that we make and eat all sorts of exotic ice cream flavors, she wondered if I would be interested in some of her herbs to make ice cream.
Of course, yes!
I’d heard about all the different ice cream flavors you can make with fresh herbs – but had only tried a couple.
She gave me some sprigs from her plants – and fresh thyme was one of them.
This ice cream recipe produces a strong flavor (however, mine might have ended up a little stronger than yours will because with young kids and a busy household – I made the ice cream base but it sat in our fridge for a day or two before I froze it.
The end result was a unique ice cream flavor. The flavor tastes elegant and classy rather than sweet and spunky like a chocolate chunk ice cream recipe would.
The honey in it makes the ice cream extremely soft and creamy – a wonderful texture.

Thyme Ice Cream
Ingredients
- 1 cup milk
- 6 large fresh sprigs of thyme
- ⅔ cup honey
- 2 cups heavy whipping cream
Instructions
- In a saucepan, heat milk and thyme and bring to a boil.
- Remove from heat, cover, and let thyme and milk stand for 20 minutes.
- Strain thyme leaves from the milk.
- Add honey and stir well.
- Cool.
- Stir in whipping cream.
- Chill until completely cooled, about 3 hours.
- Pour mixture into ice cream maker.
- Churn about 25-30 minutes or according to manufacturer’s instructions.
- Enjoy this fresh, unique ice cream flavor!
Thyme Ice Cream Recipe
Ingredients
- 1 cup milk
- 6 large fresh sprigs of thyme
- 3 egg yolks
- ⅔ cup honey
- 2 cups heavy whipping cream
Instructions
- In a saucepan, heat milk and fresh thyme sprigs to boiling.
- Remove from heat, cover, and let mixture steep for about 20 minutes.
- Pour mixture through a strainer to remove thyme.
- Meanwhile, whisk eggs in a separate bowl until light and fluffy.
- Re-heat the strained milk/thyme mixture until it begins to bubble.
- Pour about 1/2 the mixture over top of the eggs and stir until smooth.
- Pour the egg mixture into the saucepan, add honey, and heat over low heat stirring constantly.
- Continue to heat until mixture thickens and begins to stick to the back of your spoon.
- Remove from heat and let cool.
- Chill in fridge until – at least 3 hours.
- Pour into your ice cream maker.
- Churn about 25-30 minutes or according to manufacturer’s instructions.
- Enjoy!
