Gingerbread Man
Ice Cream Sandwich
A Gingerbread Man Ice Cream Sandwich is a wonderful blend of two delicious desserts…gingerbread cookies and ice cream!
This ice cream dessert is a fun, easy addition to any Christmas or birthday party menu. It’s the perfect frozen treat for a “Christmas in July” party.
You can decorate your gingerbread sandwiches or leave them “as is.” Either way, they’ll look fantastic and taste great.
What You’ll Need
- Gingerbread Men Cookies: store-bought or homemade (I used this Gingerbread Men recipe from Gingerbread House Heaven – a site full of great gingerbread recipes and ideas!)
- Vanilla Ice Cream: store-bought or homemade
Optional Items
- Icing for Decorating
- Sprinkles, Mini M&Ms, Mini Gum Drops, Chocolate Chips, Raisins, Chopped Nuts, etc.
Assembly
Let vanilla ice cream sit out at room temperature until it just begins to soften (but not too soft – the ice cream will continue to soften as you assemble the ice cream sandwiches!)
Spread about a 1/2 – 1 inch layer of ice cream on top of a Gingerbread Man cookie.
It’s okay to mound a little extra ice cream in the center of the cookie, but make sure you spread some ice cream all the way to the edge.
Place a second cookie on top of the ice cream, aligning the bodies of the Gingerbread Men.
Gently – but firmly – push the Gingerbread Men together so that the ice cream evenly distributes itself between the two cookies.
Run a dull knife along the edge of the cookies and ice cream – taking off excess ice cream and adding more ice cream where needed.
Immediately place the Gingerbread Man Sandwich into your freezer before beginning to assemble the next sandwich.
Tips
You can freeze cookies before assembling the sandwich to prevent the ice cream from melting.
Since the ice cream along the sides of the container soften and melt first, scoop ice cream from the sides rather than the center.
If you’re making a large number of ice cream sandwiches, the ice cream in your container may become too soft. If this happens, take a break. Place ice cream back into the freezer. Once the ice cream has hardened you can begin assembling the Gingerbread Men sandwiches again.
Decorating
Decorate the Gingerbread Men Cookies: Before assembling the ice cream sandwiches, decorate 1/2 of the Gingerbread Men cookies. These cookies will be the “top” of the sandwich. Decorate with colored icing, M&Ms, gum drops, etc.
Decorate the Ice Cream: After assembling all of the sandwiches, allow the ice cream to harden by letting the sandwiches sit for several minutes in the freezer. Decorate the ice cream layer by placing one of the following treats along the edge of the ice cream: sprinkles, mini M&Ms, small gum drops, chocolate chips, raisins, chopped nuts, etc. Place each sandwich back into the freezer after decorating the ice cream.
